This healthy, crunchy and delicious salad is easy and quick to make!
For best results, always buy fresh, organic vegetables, preferably local. I buy a whole head of lettuce, not the pre-cut greens in a bag.
- 1 large romaine lettuce
- 4-5 red radishes
- 1 cup cherry tomatoes
- 1 mini cucumber
- 1/3 cup parsley
- 1/2 – 3/4 tsp salt
- 3 Tbsp organic apple cider vinegar
- 3 Tbsp olive oil
- Chop romaine and parsley. Slice radishes, tomatoes (half) and cucumber. Place the vegetables in a large bowl. Lightly mix.
- Add salt, vinegar and olive oil (to taste) and gently toss. Serve immediately.
