This healthy, crunchy and delicious salad is easy and quick to make! 

For best results, always buy fresh, organic vegetables, preferably local. I buy a whole head of lettuce, not the pre-cut greens in a bag.

Ingredients

  • 1 large romaine lettuce
  • 4-5 red radishes
  • 1 cup cherry tomatoes
  • 1 mini cucumber
  • 1/3 cup parsley 

Dressing

  • 1/2 – 3/4 tsp salt
  • 3 Tbsp organic apple cider vinegar
  • 3 Tbsp olive oil

Instructions

  1. Chop romaine and parsley. Slice radishes, tomatoes (half) and cucumber. Place the vegetables in a large bowl. Lightly mix.
  2. Add salt, vinegar and olive oil (to taste) and gently toss. Serve immediately.
  3. Enjoy!
