Easy, fluffy, healthy and delicious pancakes with just two ingredients!

No sugar, gluten-free, dairy-free.

Serves 2 (4 small pancakes)



  • 1 ripe banana – the riper the better
  • 2 eggs
  • 2 teaspoons of coconut oil for the frypan
  • Berries of your choice, jam


In a bowl, mash the banana with a fork. Add the two eggs and mix them together.

Heat a non-stick frypan over medium-low heat. Put 1/2 a teaspoon of coconut oil in the pan. Pour 1/4 of the batter into the frypan, form a circle. Cook the pancake until bubbly on top and golden-brown on the bottom. Flip it using a spatula and cook until golden on the bottom – about 1-2 min. Remove the pancakes to a plate and serve with jam and/or berries of your choice. You will absolutely love these amazing pancakes!
